Avocado Brown Rice Salmon Seafood Spinach

Chilli Salmon & Rice Salad

Serves 4
  • 400g cooked brown rice
  • 380g sweet chilli and lime salmon
  • 1/2 ripe avocado, diced
  • 200g English spinach leaves, washed

I’m a working Mum, so long, leisurely lunches are a figment of my imagination. These days, I dine ‘al-desko’ and have found meals like this are perfect for quick, healthy lunches at work.

Place the rice, salmon, avocado and spinach into a bowl. Season with freshly ground pepper and toss to combine.

Just know that by eating this scrummy salad, you are getting a stack of vitamins and minerals, omega-3, fatty acids from spinach and salmon, fibre and protein.
